A recipe from the old book “Pskov Tea” is taken as a basis, it is very simple: you need to take a teaspoon of black tea and a pinch of black pepper (peas), pour a glass of boiling hot water over the tea and pepper mixture and infuse for five minutes. If desired, you can serve the tea with sugar or honey, and a piece of herring. We chose honey, replaced herring with anchovy and put it on rye Borodino bread... Add Gomphrena globosa (globe amaranth) flowers to tea leaves when brewing (two flowers per 3 grams of tea, or attune the amount of both ingredients to your liking). Grünberger is a semi-hard cow’s milk cheese from eastern Switzerland with a piquant creamy flavor. Mi Lan Xiang Dan Cong is a Guangdong oolong with obvious floral and fruity notes and an equally obvious baked tone. It is with this baked tone that Grünberger interacts, transforming it into a nutty and very soft tone, perfectly in harmony with both the creaminess of the cheese itself, and with floral-fruity notes of the tea.
