Avocado Deviled Eggs Ingredients: 6 hard-cooked eggs, peeled and cut lengthwise 1 fully ripened avocado from Mexico, peeled, pitted and diced 1 tablespoon plain low or no-fat yogurt 2 teaspoon Dijon mustard 1 teaspoon white vinegar 1/2 to1 teaspoon salt 1/2 teaspoon ground black pepper 1 tablespoon minced jalapeño 1 tablespoon finely chopped onion chopped chives (optional)

Bake an Egg in an Avocado for a Fast and Healthy Breakfast Treat
preheat oven to 425 with cast iron pan inside; slice avocado in half, remove pit, and flatten slightly (so they stay level); put avocado halves in preheated pan, crack (not XL!) egg in, put whatever you want on top; place in oven and cook till your eggs are done the way you like 'em- about 10 minutes for a soft yolk.
